The event celebrates the friendship and correspondence between Auguste Escoffier and his first Italian disciple, the Piedmontese Silvestro Cavallito, originally from Cocconato. Letters, kitchen notebooks, and historic menus testify to a deep relationship of collaboration between the two chefs. Cavallito, after years in England, returned to Italy and in 1924 inaugurated Osteria della Pompa, today a Farmhouse (Agriturismo), bringing with him the experience and elegance of great international cuisine.
- Marovè Farm:
Marovè is a farm in Cocconato that for twenty years has produced hazelnuts, corn, chili, and vegetables for Osteria della Pompa. It transforms local products into specialties such as dried chili, sweet spicy sauce, Bonarda grape mustard, and stone-ground cornmeal. Products can be purchased at the sales point or directly at the Osteria.

Osteria della Pompa offers trekking on the Monferrato hills to experience the territory with the slow pace of walking. In collaboration with Marco Leone, fitwalking instructor, daily walks, night treks, and longer events are organized. An authentic way to discover Monferrato on foot, following updated routes and experiences.
Osteria della Pompa and the Marovè farm, in collaboration with the “A Ruota Libera” Association, propose the discovery of the territory by e-bike. The rental of pedal-assisted bicycles allows for slow and sustainable tourism, with recommended routes and dedicated support. Reservation required at least 24 hours in advance, assistance on request.
